Structured data hands Google explicit types and properties so objects on the page can be read as objects.
What is entity recognition here?
Not a branded API. The documented job of the vocabulary: this is a Product, this is an Organization, this is an Article, and these are the properties that belong to that type.
What does Google document?
You help Google by providing explicit clues about the meaning of a page. That purpose is the basis Google gives for richer search displays.
What is this based on?
Because understanding types and properties is exactly what the introduction to structured data describes.
What does not follow?
Recognition of a type is not a Knowledge Graph insert, a panel, or a ranking change. It is not disambiguation until identifiers distinguish this instance from others with the same type and a similar name. Computational linguistics has a separate method under the same problem: named entity recognition.
